The Spatula Method
You will warm your spatula before using it to smooth buttercream; you can do this by using tap water. Do not allow it to get too hot and make sure that you shake off any excess water after heating it, since you do not want your buttercream wet. You can smooth out a nice finish on your buttercream using the warm moisture of the smooth surface of the spatula.
The Paper Towel Method
For this method, you will use a crusting type buttercream. Using a spatula, you will first smooth out the buttercream as you normally would. After about 15 minutes, the icing will crust. You will then place a smooth paper towel without patterns, such as the brand Viva onto the buttercream surface of your cake.
You will then place the palm of your hand onto the paper towel and rub gently. Using the warmth of your hand, you will smooth over the paper towel. This method will work well to remove any creases and wrinkles.

Crumb coat your cakes first with a glaze, in order to make the buttercream smoothing process much smoother. After the glaze is dry, seal in the crumbs, although they will show using the glaze will prevent them from mixing into your buttercream icing. This will create a smoother surface before you ever begin the icing of the cake. |
